This boudin dip is a hard-to-resist baked appetizer flavored with boudin (a traditional Cajun sausage made from rice and meat), melted cheese, and a hint of Cajun seasoning. It's topped with crispy bacon and green onions. What's not to love?

Boudin, The Cajun Sausage

Boudin, me "ning "aus" ge a "d pronounced "boo- "an," is a "delicacy in south Louisiana. Its ingredients usually include pork meat, organ meat, rice, and a variety of spices, as well as the Cajun holy trinity of onions, celery, and bell peppers.

These ingredients are stuffed into a natural pork casing and cooked into a flavorful link. The sausage casing keeps the loose filling together, which is much like the classic dirty rice. 

Now, dirty rice is not Rice Dressing. These popular Cajun recipes are very similar, made with rice, similar to the filling of boudin sausage. The difference is that dirty rice is made of organ meat, and rice dressing is not. It's made of only ground pork and beef. There are no organ meats in rice dressing.

My fondest memories are of eating a hot boudin link from the grocery store or gas station, accompanied by a handful of saltines and a Coke. It's a perfect combination! Some have a personal preference for cold boudin over hot boudin. I like it either way, but cooking it on the grill until the outside has a crispy texture is best!

Boudin Dip Ingredients

  • Cream cheese - let it sit at room temperature for smooth blending.
  • Sour cream - adds tartness and more creaminess to the dip.
  • Sharp cheddar cheese - best cheesy flavor.
  • Boudin - cooked regular or spicy links. 
  • Cajun seasoning blend - for just the right spicy flavor.
  • Salt - just enough to flavor the whole dish.
  • Bacon - cooked crisp and crumbled for the perfect tasting garnish.
  • Green onions - sliced on top for a fresher, milder, oniony flavor.

Instructions

Preheat oven to 350°F and prepare a pie dish, medium-sized baking dish, or casserole dish with non-stick spray.

  • Split the sausage down its length and scoop out the filling into a small bowl.
  • Cream the cream cheese with a hand or stand mixer in a large mixing bowl until smooth.

  • Add sour cream to the cream cheese and blend with the mixer.
  • Stir in the cheese, boudin meat, green chilies, and seasonings until well incorporated.

  • Spoon the dip mixture into the prepared pan.
  • Place the pan in the oven and bake for 20-30 minutes or until the boudin dip bubbles on the edges.
  • Remove the dish from the oven and sprinkle the top with bacon and green onions.

Hint: Another garnish for boudin dip, besides bacon and green onion, is crumbled cracklings.

Serve

Serve warm with baguette slices, chips, or crackers.

Storage

Store in the refrigerator before or after baking in an airtight container. Be sure the boudin dip is cooled before refrigerating.

The boudin dip may be made ahead and frozen before or after baking. Defrost and bake in the oven, or warm the pre-baked dip in the microwave.

Cook the boudin in the air fryer at 375°F for 10 to 15 minutes, or on the grill until the outside is brown and crisp - so easy!

Ingredients

  • 8 ounces cream cheese, room temperature
  • 8 ounces sour cream
  • 1 cup or 4 ounces shredded sharp cheddar cheese
  • 1 pound cooked boudin
  • 1 teaspoon or more of Cajun seasoning blend
  • 4-ounce can of chopped green chilies
  • .5 teaspoon salt
  • 2 slices bacon, cooked crisp and crumbled
  • 2 green onions, sliced

Instructions

  1. Preheat oven to 350° F and prepare a pie dish, medium-sized baking pan, or casserole with spray oil.
  2. Split the skin of the boudin all the way down the length of the sausage and scoop out the filling into a small bowl.
  3. Cream the cream cheese with a hand or stand mixer in a large bowl until smooth.
  4. Add sour cream to the cream cheese and blend together with the mixer.
  5. Stir in the cheese, boudin meat, seasonings, and green chilies until they are well incorporated.
  6. Spoon the dip mixture into the prepared pan.
  7. Place pan in the oven and bake for 25 minutes or until the boudin dip bubbles on the edges.
  8. Remove the dish from the oven and sprinkle the top with bacon and green onions.
  9. Serve warm with baguette slices, chips, or crackers.
