Boudin, meaning sausage and pronounced "boo- dan," is a delicacy in south Louisiana. Its ingredients usually include pork meat, organ meat, rice, lots of spices, and the Cajun holy trinity of onions, celery, and bell peppers.
These ingredients are stuffed into a natural pork casing and cooked into a flavorful link. The sausage casing keeps the loose filling together, which is much like the classic dirty rice.
Now, dirty rice is not Rice Dressing. These popular Cajun recipes are very similar, made with rice like the filling of boudin sausage.
