Boudin, The Cajun Sausage

Boudin, (pronounced "boo-dan") is a delicacy in south Louisiana. Its ingredients usually include pork meat, organ meat, rice, and a variety of spices, as well as the Cajun holy trinity of onions, celery, and bell peppers.

These ingredients are stuffed into a natural pork casing and cooked into a flavorful link. The sausage casing keeps the loose filling together, which is much like the classic dirty rice. 

Now, dirty rice is not Rice Dressing. These popular Cajun recipes are very similar, made with rice, similar to the filling of boudin sausage. The difference is that dirty rice is made of organ meat, and rice dressing is not. It's made of only ground pork and beef. There are no organ meats in rice dressing.

  • Cream cheese - mix it until smooth or bring to room temperature before miing with the rest of the ingredients.
  • Sour cream - adds tartness and more creaminess to the dip.
  • Cheese-Sharp cheddar is great for its intense cheesy flavor, and I find the Mexican cheese blend has an excellent ooey-gooey melt. For a more peppery flavor, pepperjack cheese is an excellent choice. You can use your favorite kind of cheese.
  • Boudin - regular or spicy links, without the skin. 
  • Cajun seasoning blend - for just the right spicy flavor.
  • Salt - just enough to accent the flavors of the whole dish.
  • Bacon - cooked crisp and crumbled for added favor and as a garnish.
  • Green onions - for a fresh, mild, oniony flavor.

Instructions

Preheat oven to 350°F and prepare a pie dish, medium-sized baking dish, or casserole dish with non-stick spray.

  • Split the sausage down its length and scoop out the filling into a small bowl.
  • Cream the cream cheese with a hand or stand mixer in a large mixing bowl until smooth.
  • Add sour cream to the cream cheese and blend with the mixer.
  • Stir in the cheese, boudin meat, green chilies, seasonings, bacon, and green onions until well incorporated. Reserve some cheese, bacon, and green onions for garnish.
  • Spoon the dip mixture into the prepared pan.
  • Place the pan in the oven and bake for 20-30 minutes or until the boudin dip bubbles on the edges.
  • Remove the dish from the oven and sprinkle the top with more cheese, bacon, and green onions.

  • 2 cups or 16 ounces of shredded sharp cheddar cheese, Mexican blend cheese, or pepperjack cheese

  • 1 teaspoon or more of Cajun seasoning blend
  • 4-ounce can of chopped green chilies
  • .5 teaspoon salt
  • 3 slices of bacon, cooked crisp and chopped or crumbled
  • 2 green onions, sliced

Instructions

  1. Preheat oven to 350° F and prepare a pie dish, medium-sized baking pan, or casserole dish with spray oil.
  2. Split the skin of the boudin all the way down the length of the sausage and scoop out the filling into a small bowl.

  5. Stir in 1 ½ cups of the cheese, boudin meat, seasonings, green chilies, 2 crumbled bacon slices, and half of the green onions until they are well incorporated.

  7. Place the pan in the oven and bake for 20 to 25 minutes or until the boudin dip bubbles on the edges.
  8. Remove the dish from the oven and sprinkle the top with ½ cup cheese, and the rest of the bacon and green onions.
