Description

A baked dip flavored with boudin, a Cajun sausage of rice and meat, melted cheese, and Cajun seasonings, topped with crispy bacon bits and onion.

Ingredients

Units Scale
  • 8 ounces cream cheese, room temperature
  • 8 ounces sour cream
  • 2 cups or 16 ounces of shredded sharp cheddar cheese, Mexican blend cheese, or pepperjack cheese
  • 1 pound cooked boudin
  • 1 teaspoon or more of Cajun seasoning blend
  • 4-ounce can of chopped green chilies
  • .5 teaspoon salt
  • 3 slices of bacon, cooked crisp and chopped or crumbled
  • 2 green onions, sliced

Instructions

  1. Preheat oven to 350° F and prepare a pie dish, medium-sized baking pan, or casserole dish with spray oil.
  2. Split the skin of the boudin all the way down the length of the sausage and scoop out the filling into a small bowl.
  3. Cream the cream cheese with a hand or stand mixer in a large bowl until smooth.
  4. Add sour cream to the cream cheese and blend together with the mixer.
  5. Stir in 1 1/2 cups of the cheese, boudin meat, seasonings, green chilies, 2 crumbled bacon slices, and half of the green onions until they are well incorporated.
  6. Spoon the dip mixture into the prepared pan.
  7. Place the pan in the oven and bake for 20 to 25 minutes or until the boudin dip bubbles on the edges.
  8. Remove the dish from the oven and sprinkle the top with 1/2 cup cheese, and the rest of the bacon and green onions.
  9. Serve warm with baguette slices, chips, or crackers.

Notes

  • Another garnish besides the bacon and green onion is crumbled cracklings, which are fried pork skins.
  • Cook the boudin on the grill until the outside is brown and crisp or in the air fryer at 375 ° F for 10 to 15 minutes; so easy!
