This luscious Keto Lemon Berry Dessert is a little helper to get you to your weight loss goal. It's full of flavor, with no sugar added, and has a delightful creamy filling. Serve it to your whole household. It'll get eaten and not just for Keto's sake!

I like eating low-sugar, low-carb desserts. I just feel better when I consume fewer carbs in my diet. That's why I like making and eating Keto diet desserts like this Keto Lemon Berry Dessert and this Keto Strawberry Jello Dessert.

Keto is a low-carbohydrate, moderate-protein, and high-fat diet.

These Fat Bombs are a help to those following a low-carb or keto diet. They are the bomb when it comes to a low-carb, high-fat snack.

I also receive many compliments on this Best Low-Carb Coconut Pie, Undertaker's Delight. It's a treat for carb-conscious coconut lovers.

Ingredients

A small pitcher of cream on a wooden board with a zester , la lemon, a vanilla bean, a bowl of blue berries and strawberries scattered around.
  • Cream cheese - for a tangy, cheese taste.
  • Heavy cream - whipped for creamy flavor and testure.
  • Stevia - it's all-natural and so is monk fruit.
  • Lemon extract - a concentrated lemon flavor.
  • Vanilla bean paste or vanilla extract - I prefer using vanilla bean paste instead of the extract. It has a punch of sweetness along with a rich vanilla flavor. The seeds add to the dessert's look, too.
  • Lemon zest - grated zest adds fresh lemon flavor.
  • Strawberries - a fresh, fruity taste of strawberries is low in sugar.
  • Blueberries - also low in sugar, but fll of fruit flavor.

Instructions

So here are the steps to making the dessert.

  • We start by creaming the cream cheese and then whipping some heavy cream.
  • Sprinkle the stevia into the cream towards the end of beating.
  • Next, mix them together and add lemon extract, grated lemon zest, and vanilla for lots of fresh flavors.

  • Layer berries and cream alternately into a bowl or individual serving cups.
  • Refrigerate and serve cold.

Hint: This dessert keeps well for several days in the refrigerator. I think the longer it sits, the better it tastes.

Top Tip

I doubled the recipe to fill a large trifle dish. I filled small dessert cups with the leftovers, then topped them with berries and garnished them with fresh mint leaves.

A luscious dessert of berries layered with a lemon and vanilla flavored cream filling fit for the keto diet or low carb eating.

Ingredients

4 ounces cream cheese 1 ½ cups heavy whipping cream 2 packets stevia (to equal 2 teaspoons of sugar) or more ¼ teaspoon lemon extract ¼ teaspoon vanilla bean paste or vanilla extract zest from half of a lemon, grated 1-pint fresh strawberries, sliced 1-pint fresh blueberries

Instructions

In a medium bowl, cream the cream cheese until soft, about 3-4 minutes while scraping sides with a spatula often.

In a large bowl, beat the heavy cream until peaks form being careful not to overbeat.

Sprinkle the stevia into the cream towards the end of beating.

Add the cream cheese to the whipped cream gently mixing until they are just mixed together.

Stir in the lemon extract, lemon zest and the vanilla to the cream mixture and stir to combine.

Layer berries and cream alternately into a bowl or individual serving cups.

Refrigerate and serve cold.

Notes

When making a large trifle, double the recipe and use the leftover cream to make a few individual dessert cups if there is any to spare.
