Keto, You Say?
Yes, Keto! You've probably already heard of it. The Keto or Ketogenic diet is a weight loss plan of eating foods high in fat, moderate in protein, and low in carbohydrates, which brings the body into a state of ketosis. Ketosis is when the body switches from burning carbs to burning fat. Now, that's clever!
During my daughter's visit after the holidays, I decided to join her on this fat-burning Keto journey. I usually follow a Daniel Fast the first of the year, and since she was here to guide me, I thought Keto would make a good transition from the decadent Holiday indulgences to simpler meals.
I must say I was dragging the first 5 days into it, but then things began to change. My mood lifted, and my desire for carbs had lessened. I didn't feel hungry all the time either.
There are many filling foods allowed on the Keto diet, like these fat bombs. It's the fat and protein in them that help satisfy hunger.
Making Fat Bombs

So during the first few days of this Keto journey, I was missing something sweet. Then I remembered the Fat Bombs my daughter-in-law, Jami, had introduced me to last year.
I had made a few batches then and enjoyed them as a guilt-free snack. These fat bombs consisted of coconut oil, cocoa powder, almond butter, and stevia. They are pretty tasty, especially if you haven't had any sugar in a while.

Today, we're taking them up a notch by adding vanilla flavoring and some unsweetened coconut. The coconut adds a bit more texture and taste to help satisfy the need for a chewy, sweet snack. My favorite kind!

We can also add chopped pecans in place of or with the coconut. Or, what about something really different, like ground spicy Cajun Cracklins?

Surprisingly, the spicy, salty, and sweet go well together with the chocolate in these snacks, but you can choose any or no additions. Exploring with different flavors is fun and gives your taste buds a change.

Fat Bombs
These delicious Fat Bombs are a chocolaty, nut-butter, sugar-free snack good for following the Keto diet or as a sugar-free, low-carb snack.
- Total Time: 45 minutes
- Yield: 16 one-ounce size Fat Bombs 1x
Ingredients
- ½ cup coconut oil, melted
- ½ cup cocoa powder
- ½ cup almond butter
- ½ cup peanut butter
- 2 teaspoons Stevia
- ½ teaspoon vanilla extract
- ⅓ cup unsweetened shredded coconut
Instructions
- Prepare molds by spraying them with vegetable spray.
- Melt coconut oil in a saucepan and stir in cocoa.
- Add nut butters, stirring with a whisk until they are melted into the chocolate mixture.
- Stir in stevia and vanilla extract.
- Pour into molds.
- Sprinkle the shredded coconut on top of the fat bombs.
- Place molds into the freezer until the fat bombs are solid.
- Pop out the fat bombs and store in the freezer or refrigerator in an airtight container.
Notes
- Substitute shredded coconut with chopped pecans or maybe some spicy Cajun Cracklin crumbs to make your own Fat Bomb combination.
- Use cupcake pans or silicone candy molds for the Fat Bombs.
- Make sure they are frozen firm, about 30 minutes to an hour, before removing them from the molds.

I greased cupcake and brownie pans for the mold, and that worked fine, but silicon molds may make popping the Fat Bombs out easier. I did have to use a plastic knife to convince some of the candies to come out, though. This just shows you can use whatever is on hand when trying new things.
