Start With Sweet Red Peppers

Have you tried a bag of mini sweet red, orange, and yellow peppers from the grocery store, yet?

They are delicious any way you serve them. I keep a bag in my refrigerator for cooking and snacking. Their sweetness is the perfect beginning for this spinach side dish.

First, use a large pan. Then sauté the peppers in olive oil with a bit of garlic. Add some sliced mushrooms and whole grape tomatoes allowing them to cook for a few minutes. Next add half of a large container of fresh spinach.

Then, cover the pan and let the leafy greens cook down. Because this vegetable takes up a lot of real estate, you need to cook it in batches, reloading the pan with the rest of the spinach after the first half is cooked down.

After the spinach is cooked, it's time to season with salt, red pepper flakes, and soy sauce. Just give it a good stir and you're done! It's so delicious! I get much satisfaction biting into the meaty mushrooms and those little tomatoes that pop with flavor. The heat from the red pepper flakes with the salty soy sauce compliment this spinach side (or main) dish perfectly. They make my mouth happy!

Description

This vegetable dish of spinach, mini sweet peppers, mushrooms, and grape tomatoes flavored with red pepper flakes and soy sauce makes a hearty side or meatless main dish. It's quick, easy and very healthy.


Ingredients

  • 3 tablespoons olive oil
  • 1 ½ cups sliced mini sweet pepper, about 9-10
  • 4 garlic cloves, pressed
  • 8 ounces mushrooms, sliced
  • 1-pint grape tomatoes, whole
  • 10 ounces fresh spinach
  • 3 tablespoons soy sauce
  • 1 teaspoon sea salt
  • ½ teaspoon red pepper flakes

Instructions

  1. Heat oil in a large saucepan.
  2. Saute peppers in oil for about 10 minutes, adding the garlic during the last few minutes of cooking.
  3. Add mushrooms and tomatoes, sauteeing for about 5 more minutes, or until the tomatoes start blister.
  4. Add half of the spinach and close the lid until spinach is cooked down, leaving enough room for the rest of the spinach to be added to the pot. Close the lid on the second batch of fresh spinach and simmer on medium-low heat for about 5 minutes. 
  5. Season with salt, pepper flakes, and soy sauce, stir, and serve.

Notes

Garnish with pecan pieces or your favorite nut for added taste and crunch.

Eating On A Daniel Fast

I know many of us are trying to shed pounds and eat healthier at the beginning of the new year. That's why I thought you'd like this recipe. It was something I whipped up in my kitchen recently while following a Daniel fast.

For the past 3 years, I have joined with others in a 21-day prayer and Daniel fast in the month of January. Basically, the fast is a diet of drinking only water and eating fruits and vegetables while abstaining from sugar, bread, dairy, and meat. I wasn't going to mention it, but this fast has been too good for me not to tell.
