- 3 tablespoons olive oil
- 1 1/2 cups sliced mini sweet pepper, about 9-10
- 4 garlic cloves, pressed
- 8 ounces mushrooms, sliced
- 1-pint grape tomatoes, whole
- 10 ounces fresh spinach
- 3 tablespoons soy sauce
- 1 teaspoon sea salt
- 1/2 teaspoon red pepper flakes
Instructions
- Heat oil in a large saucepan.
- Saute peppers in oil for about 10 minutes, adding the garlic during the last few minutes of cooking.
- Add mushrooms and tomatoes, sauteeing for about 5 more minutes, or until the tomatoes start blister.
- Add half of the spinach and close the lid until spinach is cooked down, leaving enough room for the rest of the spinach to be added to the pot. Close the lid on the second batch of fresh spinach and simmer on medium-low heat for about 5 minutes.
- Season with salt, pepper flakes, and soy sauce, stir, and serve.
Notes
Garnish with pecan pieces or your favorite nut for added taste and crunch.
