1 tablespoon olive oil
1.5 cups chopped yellow onion, or 1 large onion
2 cloves of garlic, pressed
8 ounces of cream cheese, softened
8 ounces, or 1 cup, of mayonnaise
8 ounces, or 1 cup, of sour cream
.75 cup of dill pickles chopped, spears, or chips
.75 teaspoon Cajun seasoning blend
Instructions
- Heat oil in a medium to a large saucepan.
- Cook onions in oil, stirring often, until lightly browned and caramelized, about 15 minutes.
- Remove onions from the pot into a bowl and set aside to cool.
- Cream the cream cheese with a mixer until smooth, then stir in mayonnaise and sour cream.
- Add the garlic, cooled onions, pickles, and seasoning to the cream cheese mixture and mix until well blended.
- Transfer the dip to a bowl, cover it with a lid to seal it, and refrigerate for a couple of hours or until the dip is chilled.
- Serve with chips, crackers, and/or fresh vegetables.
- Store in the refrigerator for up to 5 days.

- A white or yellow onion will do.
- Substitute canola oil for olive oil.
- Stir the onions in the hot oil often so they don't burn.
- Using softened cream cheese helps get a smoother texture.
- Use salt and pepper to taste instead of the Cajun seasoning blend.
- Make a change by using your favorite kind of pickle instead of dill.
