- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon baking powder
- 1/2 cup salted butter, softened
- 1 cup sugar
- 2 eggs, beaten
- 1 cup mashed ripe bananas, or 3 medium ripe bananas
- 1 teaspoon vanilla extract or vanilla bean paste
- 1/2 cup milk
- 1/2 cup nuts, optional
Instructions
- Preheat oven to 350 degrees and prepare a 5"x 9" loaf pan by spraying with cooking spray or lining it with a piece of parchment paper and spraying the inside with cooking spray.
- Sift flour, salt, and baking powder together in a medium-sized bowl.
- Cream the butter and sugar together with a mixer, then mix the eggs.
- Add bananas and vanilla, stirring until well combined.
- Mix in the flour mixture a little at a time until thoroughly combined.
- Pour milk into the bread batter slowly while stirring all of the ingredients together.
- Add pecans, stirring to combine.
- Pour the mixture into the prepared loaf pan and bake for 60 minutes, or until a toothpick inserted into the center of the bread comes out clean.
- Remove the bread from the oven and let it rest in the pan for about 10 minutes. Then, remove it and cool completely before slicing.
Notes
- Be sure to use ripened bananas for the best flavor and no more than 1 cup.
- Vanilla bean paste gives the bread a richer flavor.
- Bring eggs, butter, and milk to room temperature for fluffier results.
- For variation, add 1/2 cup of chocolate chips.
