Banana Bread Recipe

An easy to make recipe tha's super-moist, soft in texture, and packed with banana flavor.

Ingredients

  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/2 cup salted butter, softened
  • 1 cup sugar
  • 2 eggs, beaten
  • 1 cup mashed ripe bananas, or 3 medium ripe bananas
  • 1 teaspoon vanilla extract or vanilla bean paste
  • 1/2 cup milk
  • 1/2 cup nuts, optional

Instructions

  1. Preheat oven to 350 degrees and prepare a 5"x 9" loaf pan by spraying with cooking spray or lining it with a piece of parchment paper and spraying the inside with cooking spray.
  2. Sift flour, salt, and baking powder together in a medium-sized bowl.
  3. Cream the butter and sugar together with a mixer, then mix the eggs.
  4. Add bananas and vanilla, stirring until well combined. 
  5. Mix in the flour mixture a little at a time until thoroughly combined.
  6. Pour milk into the bread batter slowly while stirring all of the ingredients together.
  7. Add pecans, stirring to combine.
  8. Pour the mixture into the prepared loaf pan and bake for 60 minutes, or until a toothpick inserted into the center of the bread comes out clean.
  9. Remove the bread from the oven and let it rest in the pan for about 10 minutes. Then, remove it and cool completely before slicing.

Notes

  • Be sure to use ripened bananas for the best flavor and no more than 1 cup.
  • Vanilla bean paste gives the bread a richer flavor.
  • Bring eggs, butter, and milk to room temperature for fluffier results.
  • For variation, add 1/2 cup of chocolate chips.
