Ingredients

Scale
  • 4 avocados
  • .25 cup red onion
  • .5 cup fire-roasted tomatoes, chopped
  • 6 tablespoons of orange juice or juice of 1 navel orange
  • 2 tablespoons chopped cilantro
  • 1 diced jalapeno pepper, no seeds or veins
  • a pinch or more red pepper flakes
  • 1 garlic clove, pressed
  • .5 teaspoon salt
  • a pinch or more black pepper

Instructions

  1. Cut avocados in half, remove the pit, and score the flesh of the avocado then scoop it out into a medium-sized bowl.
  2. Add the rest of the ingredients and stir to combine.
  3. Serve with tortilla chips or refrigerate for later.

Notes

  • Score the avocado into large sizes for chunkier guacamole.
  • For smooth guacamole, mash avocado with a potato masher or fork before adding the rest of the ingredients.
  • Use freshly roasted tomatoes or a can of fire-roasted tomatoes, drained and chopped.
  • A pinch is between 1/16 and 1/8 teaspoon.
