- 1 15.25-ounce lemon cake mix (I use Duncan Hines Lemon Supreme)
- 1/2 cup vegetable oil
- 2 whole eggs
- Zest of 1 lemon
- 1 1/2 tablespoons lemon juice
- Powdered sugar
Instructions
- Preheat oven to 350 degrees.
- Mix together in a large bowl with a spoon the cake mix, oil, eggs, lemon zest, and lemon juice just until well combined.
- Drop by a rounded measured teaspoonful 2 inches apart onto parchment paper-lined cookie sheets.
- Bake for 10-12 minutes or until the edges are lightly browned.
- Immediately dust with powdered sugar through a sieve.
- Let cool for a few minutes, then remove to cooling racks.
Notes
- Break up lumps in cake mix before adding ingredients and mix batter until most of the lumps are gone.
- The smaller this soft cookie is the better it holds up.
