Only six simple ingredients to these easy, flavorful cookies made with fresh lemon and a boxed lemon cake mix.
1 15.25-ounce lemon cake mix (I use Duncan Hines Lemon Supreme)
1/2 cup vegetable oil
2 whole eggs
Zest of 1 lemon
1 1/2 tablespoons lemon juice
Preheat oven to 350 degrees.
Mix together in a large bowl with a spoon the cake mix, oil, eggs, lemon zest, and lemon juice just until well combined.
Drop by a rounded measured teaspoonful 2 inches apart onto parchement paper lined cookie sheets.
Bake for 10-12 minutes or until edges are lightly browned.
Immediately dust with powdered sugar through a sieve.
Let cool for a few minutes then remove to cooling racks.
Break up lumps in cake mix before adding ingredients and mix batter until most of the lumps are gone.
The smaller this soft cookie is the better it holds up.
