Ingredients

Sweet Potatoes

  • 3 cups sweet potatoes, cooked and mashed
  • 1/4 cup butter
  • 2 large eggs
  • 1/2 cup sugar
  • 1/2 cup milk
  • 1/2 teaspoon salt
  • 1/2 teaspoon vanilla

Nut Topping

  • 1 cup brown sugar
  • 1/3 cup butter, melted
  • 1/3 cup all-purpose flour
  • 1/2 cup pecans, chopped
  • 1/4 cup pecans, chopped for garnish

Instructions

Sweet Potatoes

  1. Preheat oven to 350 degrees and butter a 9 x 13 x 2-inch casserole dish.
  2. Mix the potatoes, butter, eggs, sugar, milk, salt, and vanilla in a large bowl and pour into the prepared dish.

Nut Topping

  1. Mix the nut topping ingredients and sprinkle on top of the potatoes. 
  2. Garnish with the rest of the pecans.
  3. Bake for 30 minutes.
  4. Serve warm.

Notes

Peel and cube sweet potatoes to boil in water until they are tender, or bake them whole in the oven until fork-tender and scoop them out of the skins and into a bowl with the rest of the ingredients.

The hot potatoes with melt the butter when mixing the ingredients together.
