This spinach bread recipe made of spinach, garlic, butter, and cheeses turns French bread into an easy side dish, appetizer, or meatless main meal.

Ingredients

1 French bread loaf, sliced in half lengthwise

1/2 cup butter, softened

2-3 cloves garlic, pressed

10 ounces frozen spinach, defrosted, drained and chopped

3 tablespoons mayonnaise

1/4 cup parmesan cheese, shredded

1 cup or more mozzarella cheese, shredded

Instructions

Preheat oven to 350.

Put butter, garlic, spinach, mayonnaise, and parmesan into a medium bowl and stir to mix well.

Spread spinach mix onto bread halves and top with mozzarella cheese.

Place bread onto a baking pan and bake for 8 minutes then broil for 2 minutes or until cheese is browned and bubbly.

Slice into small pieces and serve hot.

Notes

Drain water from defrosted spinach by placing in a tea towel and twist squeezing water out. Chopping the defrosted spinach up makes it easier when biting into the bread.
