- 1 French bread loaf, sliced in half lengthwise
- 1/2 cup butter, softened
- 2-3 cloves garlic, pressed or minced
- 10 ounces frozen spinach, defrosted, drained and chopped
- 3 tablespoons mayonnaise
- 1/4 cup parmesan cheese, shredded
- 1 cup or more mozzarella cheese, shredded
Instructions
- Preheat oven to 350° F and line a baking sheet with parchment paper.
- Combine the butter, garlic, spinach, mayonnaise, and parmesan—in a large bowl and stir to make the spinach filling.
- Spread the spinach mixture onto the soft bread halves and top with mozzarella cheese.
- Place the loaf onto a baking sheet and bake for 8 minutes, then broil for 2 minutes or until cheese is golden brown and bubbly.
- Slice the large loaf into small pieces and serve hot.
Notes
- Drain water from defrosted spinach by placing it in a cheesecloth, a clean kitchen towel, or a thick paper towel and twist to squeeze the water out.
- Chopping the defrosted spinach up makes it easier to bite into the bread.
- For best results when transporting the bread on a baking tray, make a tent with aluminum foil so the cheese doesn't stick.
- Wrap the unbaked cheese bread in plastic wrap and store it in the refrigerator or freezer to bake and serve later.
- The green bread is also perfect for a St. Patrick's Day party.
