This Easy Spinach Bread Recipe is one of those hot, ooey-gooey quick breads. The combination of spinach, garlic, butter, and cheese on an open French bread bakes into the perfect side dish, appetizer, or main dish.

Ingredients

  • 1 French bread loaf, sliced in half lengthwise
  • 1/2 cup butter, softened
  • 2-3 cloves garlic, pressed or minced
  • 10 ounces frozen spinach, defrosted, drained and chopped
  • 3 tablespoons mayonnaise
  • 1/4 cup parmesan cheese, shredded
  • 1 cup or more mozzarella cheese, shredded

Instructions

  1. Preheat oven to 350° F and line a baking sheet with parchment paper.
  2. Combine the butter, garlic, spinach, mayonnaise, and parmesan—in a large bowl and stir to make the spinach filling.
  3. Spread the spinach mixture onto the soft bread halves and top with mozzarella cheese.
  4. Place the loaf onto a baking sheet and bake for 8 minutes, then broil for 2 minutes or until cheese is golden brown and bubbly.
  5. Slice the large loaf into small pieces and serve hot.

Notes

  • Drain water from defrosted spinach by placing it in a cheesecloth, a clean kitchen towel, or a thick paper towel and twist to squeeze the water out.
  • Chopping the defrosted spinach up makes it easier to bite into the bread.
  • For best results when transporting the bread on a baking tray, make a tent with aluminum foil so the cheese doesn't stick. 
  • Wrap the unbaked cheese bread in plastic wrap and store it in the refrigerator or freezer to bake and serve later.
  • The green bread is also perfect for a St. Patrick's Day party.
