Description
A salty-sweet Broccoli Cauliflower Salad packed with lots of fresh, flavorful ingredients for added crunch. The mayonnaise dressing is sweetened with dark balsamic vinegar and a bit of Stevia. A healthy treat for the taste buds!

Dressing
- 1 cup regular or light mayonnaise
- 2 teaspoons dark balsamic vinegar
- 2 packets Stevia, or 4 teaspoons of sugar
Salad
- 4 cups broccoli flowerets (1 small bunch)
- 4 cups cauliflower flowerets (1 small head)
- 1 cup red grapes cut in half
- 6 ounces bacon, cooked and crumbled
- 4 ounces medium cheddar cheese, cut into small cubes
- 1 cup pecan pieces
- 1/4 cup plus 1 tablespoons diced red onion
- 3.8-ounce can black olives, sliced
- salt and pepper to taste
Instructions
- Mix salad dressing ingredients together in a small bowl and set aside.
- Add all of the salad ingredients except for salt and pepper into a large bowl and toss together with the salad dressing.
- Salt and pepper the salad to taste.
- Refrigerate until ready to serve.
Notes
This healthy salad can be made ahead of time. The flavors marinate well together in the refrigerator for serving the next day.
