A salty-sweet Broccoli Cauliflower Salad packed with lots of fresh, flavorful ingredients for added crunch. The mayonnaise dressing is sweetened with dark balsamic vinegar and a bit of Stevia. A healthy treat for the taste buds!
1 cup regular or light mayonnaise
2 teaspoons dark balsamic vinegar
2 packets Stevia, or 4 teaspoons of sugar
4 cups broccoli flowerets (1 small bunch)
4 cups cauliflower flowerets (1 small head)
1 cup red grapes cut in half
6 ounces bacon, cooked and crumbled
4 ounces medium cheddar cheese, cut into small cubes
1 cup pecan pieces
1/4 cup plus 1 tablespoons diced red onion
3.8 ounce can black olives, sliced
salt and pepper to taste
Mix salad dressing ingredients together into a small bowl and set aside.
Add all of the salad ingredients except for salt and pepper into a large bowl and toss together with the salad dressing.
Salt and pepper the salad to taste.
Refrigerate until ready to serve.
This healthy salad can be made ahead of time. The flavors marinate well together in the refrigerator for serving the next day.
