Ingredients
Vinaigrette
2 tablespoons fresh lemon juice
1/ 3 cup extra virgin olive oil
1 teaspoon Italian seasoning
1 teaspoon salt
1 1/2 teaspoons sugar
red pepper to taste
black pepper to taste
2-3 garlic cloves, pressed
1 tablespoon water
1/3 cup Greek yogurt
2 tablespoon mayonnaise
Salad
2 cups chicken, cooked and cut into 1/2 inch pieces
2 cups green peas, frozen
1/4 cup green onion, sliced
1/2 cup celery, sliced thinly
1/2 cup feta cheese
1/2 cup black olives, sliced
1/2 cup pecans, rough chopped
Instructions
Place all of the vinaigrette ingredients into a pint jar, close the lid tightly and shake vigorously until ingredients are well blended.
Place the rest of the ingredients into a large salad bowl.
Stir together to mix the ingredients and add all of the vinaigrette.
Toss salad before covering bowl to refrigerate.
Serve cold.
