Couche Couche Recipe, A Cajun Mama's Breakfast Cereal

A traditional hot cereal of fried cornmeal mush, usually served with milk and sweetened with sugar or cane syrup.

Ingredients

  • 1/4 cup Canola or vegetable oil
  • 2 cups yellow cornmeal
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 1/3 cups water

Instructions

  1. Heat the oil in a cast-iron skillet over medium heat.
  2. Mix the dry ingredients together in a medium-sized bowl. 
  3. Add the water and stir to mix well.
  4. Pour the batter into the hot oil, and allow the crust to form and brown along the side of the pot; see notes.
  5. Turn over the couche couche using a spatula, then cover and cook for 15 minutes; lower the heat and stir occasionally.
  6. Serve hot.

Notes

  • Serving suggestions: with milk, cane syrup, sugar, preserves, or coffee milk (cafe au lait).
  • Take a peak at the underside of the batter while it's browning to make sure it does not scorch or burn before turning it over.
  • Use the spatula to cut the couche couche into pie shapes, turning it over before covering the skillet.
