- 1/4 cup Canola or vegetable oil
- 2 cups yellow cornmeal
- 1 teaspoon salt
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 1/3 cups water
Instructions
- Heat the oil in a cast-iron skillet over medium heat.
- Mix the dry ingredients together in a medium-sized bowl.
- Add the water and stir to mix well.
- Pour the batter into the hot oil, and allow the crust to form and brown along the side of the pot; see notes.
- Turn over the couche couche using a spatula, then cover and cook for 15 minutes; lower the heat and stir occasionally.
- Serve hot.

- Serving suggestions: with milk, cane syrup, sugar, preserves, or coffee milk (cafe au lait).
- Take a peak at the underside of the batter while it's browning to make sure it does not scorch or burn before turning it over.
- Use the spatula to cut the couche couche into pie shapes, turning it over before covering the skillet.
